How Product Specifications Are Structured

Each product specification defines the geographic production area, the product's essential characteristics, production method, any feed or raw material requirements, specific stages that must take place within the geographic area, and the name and address of the inspection body. Specifications are publicly accessible through the EU's eAmbrosia database, which replaced the older DOOR database.

Inspection and Control

Under Italian national law implementing EU requirements, each DOP and IGP product must be supervised by an accredited control body or a recognised consortium acting with delegated control functions. The control body carries out scheduled and unannounced inspections at each stage of production. Producers, processors, and packagers must all be registered with the relevant control body.
